History
La Cuisine de M’laïd - Morocco
“In winter, it’s better to belong to the circle of intimates and be received in the kitchen (agnir) rather than the reception room. This is where family life is focused, around the hearth.
(…) Smoke (aggou) hovers, then finds a way to escape through various skylights in the walls and roof. The whole room is a big fireplace. The branches in the ceiling glisten with soot. People’s eyes water up and absorb the pleasant smell of smoke...
The fire is lit for cooking, and at the same time, it provides heat and light."
